Summer Apple Salsa! I love creating treats using ingredients I happen to have on hand! This is so easy! 2 organic apples, peeled and cored and sliced into about 3/4” cubes. Put the apple chunks in small food processor until chopped well. Transfer to a medium sized bowl. Squeeze a little fresh lemon juice over the apples to help keep them from browning. Slice two medium sized tomatoes into small cubes (I leave the peel on). Dice some yellow or sweet onion to taste (i used about a tablespoon) and finely chop one clove of garlic. Put tomatoes, onion and garlic in food processor and chop until a little bit of liquidy sauce forms, but still chunky. Transfer to the bowl with apples and mix well. Season to taste. I used salt, pepper, dash of cumin, cilantro, and some Slap Yo Mama seasoning for a kick. You can always add some fresh pepper of your choice. I didn’t have any handy.  I added a dash of raw stevia to mine for a little sweetness. Mix well and serve with sliced cucumber, baby carrots and blue corn tortilla chips. Yummy summer afternoon treat! Enjoy!
